Collard Greens Cole Slaw
* Five leaves of collard green - washed and ribs
removed- ribs are too tough for raw eating!
* Two carrots shredded
* 2 tablespoons apple cider vinegar, or
*1/2 cup mayonnaise
* 1/2 tablespoon raw sugar
* White or black pepper to taste
Stack collard leaves and fold over. With a sharp knife, cut very thin shreds 1/16 inch to 1/8 inch. In a small mixing bowl mix the vinegar, mayonnaise, and pepper. In larger bowl, mix shredded greens and shredded carrots, and dressing. Enjoy.
